Single droplet experiments to study mechanical and thermal degradation of proteins during spray drying

Proteins in form of power could be preserved for a long period of time in natural state in terms of their functionality for various applications. Spray drying is an important industrial process to obtain such power proteins. We would like to characterize spray drying process by using single droplet experiments. Optical techniques including rainbow refractometry, laser induced fluorescence thermometry, thermofluor and speckle are going to be used to determine variations in droplet size, temperature and protein concentration within drying droplet, and protein unfolding and aggregation. Protein degradation model will be developed based on the findings of the above mentioned process investigations.
